One of the most common treats in our house is cannabis caramels. They are delicious and easy to make. Cannabis caramels also go well with many other treats like cookies and brownies.
To make cannabis caramel, you first need to make some cannabis butter. You can find the recipe for cannabis butter here.
- 1 cup cannabis butter (2 sticks)
- 4 cups granulated sugar
- 2 cups light corn syrup
- 24 ounces evaporated milk (2 cans)
- 1 teaspoon vanilla extract
Line a 9×13 inch pan with parchment paper and set aside
Take a heavy-bottomed pot or saucepan, add the butter, sugar, and corn syrup, and place over the heat. Stir on medium heat until the sugar dissolves and the mixture reaches 245 F, about 5-10 minutes.
This part can be tricky – slowly add the milk and vanilla, taking about 12-15 minutes, stirring constantly. The trick is to ensure that the mixture stays at a constant boil so that the caramels don’t coagulate.
Stir constantly until the mixture reaches the “hard ball stage” about 240-245 F on a candy thermometer, then remove from heat.
Pour the caramel into the prepared pan and refrigerate until cool and hard. This should take at least several hours.
Remove from the refrigerator at room temperature, and cut the caramels into small pieces. You can wrap them individually in wax paper if you want.
