Avocados Stuffed with Cannabis Cashew Cream

Avocados are known for their many health benefits. These include omega-3 and omega-6 acids, other healthy fatty acids, and many vitamins/minerals. The recipe below adds a twist to eating avocados with the addition of velvety cashew cream, a 100% vegan alternative to other dairy products.

2 large avocados
½ glass of clean water
1-2 tablespoons of cannabis oil
1 cup cashews, soaked for 4 hours
1 tablespoon of yeast
¼ garlic clove
2 teaspoons lemon juice
1 teaspoon of tamari
1 teaspoon apple cider vinegar
⅛ – ¼ tsp sea salt

chopped cloves
crushed cherry tomatoes
brazil nut finely grounded
olive oil or balsamic vinegar drizzle

Start by preparing the avocado. Cut in half, scoop out the seeds and remove the flesh from the skin in one piece with a big scoop. Place on a plate for later use. In a high-speed blender, combine purified water, cannabis oil, soaked cashews, yeast, garlic, lemon juice, tamari, apple cider vinegar, and sea salt. Blend until smooth. Using a spoon, fill the prepared avocado halves with the cashew cream mixture. Garnish with optional garnishes, such as chopped cloves, ground Brazil nuts, chopped tomatoes, or a drizzle of olive oil/balsamic vinegar.
Serve and enjoy!
